Lamb Burger with Onion Tomato Salad and Tzatziki Sauce

Ingredients
- ground lamb - 5 lbs.
- fresh chopped garlic - 2 Tbsps.
- fresh chopped thyme - 2 Tbsps.
- fresh chopped rosemary - 1 Tbsp.
- Worcestershire sauce - 4 dashes
- kosher salt - to taste
- pepper - to taste
- feta cheese - for garnish
- fresh baby spinach - for garnish
- For Onion Tomato Salad
- onion - 1, thin julienned
- tomatoes - 2, seeded, julienned
- sumac - 2 pinches
- olive oil - dash
- kosher salt - pinch
- For Tzatziki Sauce
- plain yogurt - 8 ozs.
- cucumbers - 2, peeled and seeded
- lemon - 1/2, juiced
- fresh dill - 1 Tbsp.
- garlic cloves - 3
- olive oil - 2 Tbsps.
- salt - to taste
- pepper - to taste
Instructions
- Mix ingredients together and form into patties.
- Season patties with kosher salt and fresh ground pepper before cooking.
- For Onion Tomato Salad: Toss ingredients together.
- For Tzatziki Sauce: Mix all ingredients in food processor, blend well. Refrigerate for at least one hour before use.
- Final Assembly: Top cooked burgers with onion tomato salad, feta cheese and baby spinach. Serve with tzatziki sauce.
