Grilled Lamb Lollipops With Root Vegetable Mash, Roasted Vegetable Medley, Red Wine Demi Glacé and Mint Oil

Ingredients
- Ingredients for Lamb
- lamb lollipops chops - 4 ea.
- salt - to taste
- pepper - to taste
- Basting Pan for Lamb
- butter - 8 oz.
- garlic - 2 cloves
- thyme - 1 sprig
- rosemary - 1 sprig
- shallots - 1 ea., small
- bay leaf - 1 ea.
- Ingredients for Root Vegetable Mash
- Yukon Gold potatoes - 1 ea., large
- sweet potatoes - 1 ea., large
- carrot - 1 ea.
- daikon radish - 4 oz.
- celeriac - 4 oz.
- butter - 4 oz.
- salt - to taste
- pepper - to taste
- Ingredients for Roasted Vegetable Medley
- tri-color cauliflower - 1 ea., floret
- baby carrots - 2 ea. (cut in half)
- asparagus - 2 ea. (cut in half)
- corn - (off the cob)
- olive oil - (drizzled)
- salt - to taste
- pepper - to taste
- Ingredients for Red Wine Demi Glacé
- Burgundy red wine - 2 cups (reduced 1/2)
- demi glacé
- butter - 2 oz.
- Ingredients for Mint Oil
- mint leaves - 4 oz.
- green onion - 2 stalks
- canola oil - 4 oz.
Instructions
PROCEDURES:
FOR MINT OIL:
Clean and cut green onions then add to mint leaves and canola oil in a blender. Blend until smooth. Add to a saucepan and season with salt then bring to a boil. Strain through a cheesecloth in a container then cool in an ice bath. Pour cooled mint oil in a squeeze bottle.
FOR DEMI GLACÉ:
Reduce red wine by half in a sauce pan.
Add Demi Glacé and bring to a boil then whisk in butter for the finish.
FOR ROOT VEGETABLE MASH:
Clean and cut all vegetables in uniformed size then cook in a steamer.
Whip vegetables in a kitchen aid mixer with butter, salt and pepper until light and fluffy.
ROASTED VEGETABLE MEDLEY:
Clean and Cut vegetables then add to a mixing bowl. Season with olive oil, salt and pepper then roast in oven.
BASTING PAN:
Combine all ingredients in a half chafer pan on the grill (lowest temperature).
GRILLED LAMB LOLLIPOP CHOPS:
Season Lamb with salt and pepper then grill to perfection. Add lamb to the basting pan on the grill for additional flavor.
