Gyro Hot Dog

Ingredients
- Ingredients for the Gyro Meat:
- ground lamb (or boneless lamb leg) - 10 lb.
- pork butt - 5 lb., diced
- ranch seasoning - 1 pkt. (3.2 oz.)
- salt - 50 gms.
- TCM - 3 tsp.
- sodium phosphate - 1.2 oz. (optional)
- ground black pepper - 2 Tbsps.
- onion powder - 3 Tbsps.
- garlic powder - 2 Tbsps.
- dried oregano - 3 Tbsps.
- meat glue - 2.4 oz. (for molding, optional)
- cold water - 2 cups
- Ingredients for the Tzatziki Sauce:
- cucumber - 3 cups, grated
- kosher salt - 1/4 cup
- Greek yogurt - 1 qt. (2 lb.)
- garlic - 3 Tbsps., minced
- dill - 4 Tbsps., chopped, fresh
- lemon juice - 1 ea. lemon
- lemon zest - 1 ea. lemon
- salt - to taste
- white pepper - to taste
Instructions
Procedure for Gyro Meat:
- Toss meat together with the seasonings (all except the meat glue). If possible, allow mixture to sit overnight before grinding.
- Grind the meat through a fine die.
- Put meat mixture in mixer and add the meat glue if you're using it.
- Mix on medium speed for 30-60 seconds, then add the water and mix for an additional 30-60 seconds.
- Proceed with stuffing into casings or baking in loaf pans or other forms as desired for end product.
Chef's note: The addition of the meat glue is not necessary (or even preferable) for a cased sausage application. It is necessary for baking in a form to cut into thin strips like the Americanized gyro meat and being able to cook it without it crumbling and falling apart.
To bake in form pan, use desired form and bake in water bath (or utilize your combi if you have one) and cook to 155°F before chilling. You could opt to substitute pork for something else and cut into a suitable shape to do this as a casingless sausage on a bun if you want to avoid pork. Or you could slice into thin strips and cook on the griddle like the typical Americanized gyro.
Procedure for Tzatziki Sauce:
- Grate the cucumber with a box grater and toss with the salt. Allow to sit for 5 minutes.
- Rinse the cucumber well in a china cap with cold water, then press water out.
- Add cucumber to a bowl with remaining ingredients and stir to combine.
- Taste and adjust seasoning as needed.
