Chocolate Avocado Mousse

Ingredients
- avocados - 4 ea., peeled and seeded
- agave syrup - 1/2 cup
- cocoa powder - 1/2 cup
- dark chocolate - 1/2 cup, 54% cacao, melted
- cocoa liquor - 2 Tbsps.
- salt - 1/4 tsp.
- brunoise strawberry sauce - (recipe follows)
- Ingredients for brunoise strawberry sauce:
- strawberries - 10-12 ea., medium
- granulated sugar - 1 cup
- lime juice - of 1 ea. lime
- lime zest - of 1 ea. lime
Instructions
- Blend avocado and agave syrup until smooth in a food processor, scraping down sides occasionally.
- Add the remaining ingredients and blend together until smooth while continuing to scrape sides.
- Pipe mixture into desired serving dish. Top off with brunoise strawberry sauce, shaved dark chocolate and fresh strawberries.
Procedure for brunoise strawberry sauce:
- Dice 7 strawberries brunoise style (around 1/8th of an inch) and set aside.
- Rough-chop remaining strawberries and add to a small sauce pot. Add sugar and lime juice and heat on medium until strawberries start to break down (about 5 minutes).
- Remove from heat. Blend in food processor until smooth and strain through a fine sieve.
- Add the diced strawberries and lime zest to the mixture and mix well. Wrap with plastic wrap and allow to cool.
