tamari-and-agave-glazed verlasso salmon

Ingredients
- Ingredients for Agave and Tamari Glaze:
- garlic - 1 Tbsp., chopped
- ginger - 1 Tbsp., chopped
- lemon grass - 2-inch sprig, smashed on its side
- tamari - 1/2 cup
- agave - 1/2 cup
- red pepper flakes - 1/2 tsp.
- Ingredients for Miso Glaze:
- tamari - 1 cup
- miso - 1 Tbsp.
- sugar - 1/3 cup
- water - 1/2 cup
- Ingredients for Forbidden Rice:
- forbidden black rice - 1 cup
- water - 1.25 cup
- sesame oil - 1 Tbsp.
- kosher salt - 1 tsp.
Instructions
Procedure for Agave and Tamari Glaze:
- In a pan, sweat the garlic, ginger and lemongrass.
- Add tamari, agave and red pepper flakes. Bring to a boil.
- For a thicker sauce, thicken with cornstarch slurry.
Procedure for Miso Glaze:
- Bring everything to a boil.
- Thicken with cornstarch slurry.
Procedure for Forbidden Rice:
- Add everything to a pot. Cover and cook on high heat until it comes to a boil.
- Reduce heat to a simmer and cook for 10 minutes.
- Remove from heat and uncover.
