Smoked Old Fashioned

Ingredients
- Iron Smoke Bourbon - 2 oz.
- simple syrup - .75 oz.
- house-made cherry bitters - 4-6 dashes
- orange zest
- black cherry
- cherry wood smoke
- Simple Syrup
- white sugar
- water
- House-Made Cherry Bitters
- high-proof liquor (i.e. Everclear) - 750 ml.
- black cherries - 12 ea.
- black cherry syrup - 1 oz.
- cherry wood chips - 4 oz.
Instructions
- Combine Iron Smoke Bourbon, simple syrup and cherry bitters over ice in mixing glass. Stir 10-12 times to chill.
- Strain over fresh ice into rocks glass.
- Squeeze orange rind over cocktail to release oils. Garnish with a black cherry.
- Stir again in rocks glass to mix orange zest and cherry.
- Place smoking hat on top of rocks glass and fill hat with a ¼ teaspoon of cherry wood chips.
- Ignite and allow to smoke for 20-30 seconds. Remove hat and serve.
Procedure for Simple Syrup
- Use a 1:1 ratio of white sugar and water.
- Bring water to a light boil. Slowly stir in sugar until dissolved. Remove from heat and allow to cool.
Procedure for House-Made Cherry Bitters
- Place wood chips on baking sheet and place in oven at 300° F for 4-6 minutes to release aroma.
- Place cherries, syrup and wood chips into a gallon ziplock bag. Mash ingredients together and add Everclear.
- Remove air from ziplock bag. Place into a set water bath at 55° C and cook for 2 hours.
- Remove zip lock bag and allow to cool to room temperature. Refrigerate for 8-12 hours.
- Finely strain and store in bitter bottles.
