Alsatian Apple Tart

- Line a nine-inch pie pan with pate brisee.
- Preheat oven to 375º.
- Peel and core apples; cut into eight slices. Moisten apple slices with lemon juice and arrange on pie crust. Bake at 375º for 15 minutes.
- While tart is baking, mix together sugar, cream, eggs and kirsch. Strain through sieve and pour over apple mixture, leaving tops of apple showing slightly. Return to oven and bake 15 minutes at 350º.
- Cool, cut and serve with vanilla ice cream.
