Wagyu Donburi

Ingredients
- Ingredients for the Wagyu Steak:
- wagyu flank steak - 2 ea., 12 ozs.
- tamari - 1 1/2 cup
- mirin - 1 cup
- rice wine vinegar - 1/4 cup
- sesame oil - 1 tsp.
- bonito flakes - 2 Tbsps.
- sugar - 1 Tbsp.
- Ingredients for the Cured Egg Yolk:
- organic egg yolk - 2 ea.
- tamari - 1 cup
- mirin - 1/2 cup
- kombu - 1/2 sheet
- rice wine vinegar - 1/4 cup
- Ingredients for the Japanese Rice:
- sushi rice - 2 cups
- water - 2 cups
- running water - for rinsing
- rice wine vinegar - 1 cup
- kombu - 1 sheet
- mirin - 1/2 cup
- sugar - 2 Tbsps.
- salt - 1 Tbsp.
- Ingredients for Assembly:
- green onions - 2 Tbsps. finely chopped
- choice caviar - 1 Tbsp.
- cured egg yolk - 1 ea.
- toasted sesame seeds - 1 Tbsp.
- soy glaze
Instructions
Procedure for the Steak:
- Combine wet ingredients and sugar in a small mixing bowl.
- Marinate the flank steak for at least 30 minutes and grill to your preferred temperature.
- Transfer the steak to the marinade and let it sit for 10 minutes. Slice the steak thinly.
- Transfer the marinade to a small sauce pot and add the bonito flakes. Reduce until nappe consistency.
- Adjust the seasoning if needed. Strain in fine mesh and set aside.
Procedure for the Cured Egg Yolk:
- In a small sauce pot, combine all ingredients except the egg yolk.
- Simmer for at least 10 minutes and remove heat. Cool down. Discard the kombu and transfer in a shallow plastic pan.
- Submerge the yolk to the marinade and place a damp cloth on top to keep the moisture. Marinate for at least a day before using.
Procedure for the Japanese Rice:
- In a small saucepan, combine the vinegar, mirin, kombu, sugar and salt, and let it simmer until fully incorporated. Cool down and set aside.
- Using a rice cooker insert, rinse the sushi rice at least 4 times under running water until the water is clear. Add 2 cups of water for the 2 cups of rinsed rice.
- Cook in the rice cooker until done. Transfer to a wooden bowl and fold in the vinegar mixture using a paddle while fanning the rice. Set aside.
To Assemble:
- Using a bowl, scoop rice in the middle. Fan the sliced wagyu steak the rice. Leave space on top.
- Carefully spoon the cured egg yolk on top of the rice. Add a good amount of green onions as well.
- Sauce the steak with the marinade glaze and sprinkle with sesame seeds.
- Finally scoop a heap of your choice of caviar.
- Serve warm.
