Vegan Pappardelle With Carrot Miso Sauce and Mint Gremolata

Ingredients
- For the pasta
- 00 flour - 150 g
- semolina flour - 150 g
- kosher salt - 1/2 tsp.
- water - 150 ml
- olive oil - 2 tsp.
- For the sauce:
- shallots - 2 large, medium dice
- garlic - 2 Tbsps., minced
- olive oil - as needed
- ground cumin - 2 Tbsps.
- ground ginger - 1 Tbsp.
- ground coriander - 1 Tbsp.
- kosher salt - as needed
- fresh cracked black pepper - as needed
- sliced carrots - 2 cups
- unsalted cashews - 1/4 cup
- white miso paste - 2 Tbps.
- vegetable stock - 3 cups
- vegan cream - 1/4 cup
- For the Mint + Hazelnut Gremolata
- mint - 1/4 cup, chiffonade
- Italian parsley - 1/2 cup, chopped
- lemon - 1 ea., zested
- orange - 1/2 ea., zested
- olive oil - 1/2 cup
- salt and pepper - as needed
- toasted hazelnuts - 1/4 cup, chopped
Instructions
For the pasta:
- Mix flour, semolina + salt and create a well. Pour in water + olive oil into the well. Mix together until well combined. Knead until the dough is soft and smooth. (Add more flour if the dough is too wet, and more water if the dough is too dry). Form into a ball, wrap with plastic + place in walk-in for 30 min. After dough has rested cut dough into 4 equal pieces. Thinly roll out the pasta either by hand or with a pasta machine. Dust with more semolina to prevent sticking, and roll up the dough. Cut into wide ribbons and lay them into bundles.*Fresh pasta only takes a few minutes to cook. Make sure you salt your water!
For the sauce:
- Sauté the shallots and garlic in olive oil until golden and fragrant. Add in spices + cook for 2 more minutes. Next add carrots, cashews + vegetable stock. Bring to a boil, add in miso paste. Drop to a simmer and cook until carrots + cashews are soft, about 15 minutes. Stir in vegan cream and cook for 2 more minutes. Taste and adjust seasoning if necessary. Transfer all ingredients into a blender, and puree until smooth.
For the Gremolata:
- Mix all ingredients in a small mixing bowl. Taste for seasoning and adjust if necessary.
To Assemble:
- Place sauce into sauté pan and let it get hot. Next, add your pasta and cook for 1 minute just to get everything heated through. Transfer to a plate or bowl of your choice and top with gremolata. Garnish and serve immediately.
