“Steak-osaurus” with Chimichurri

Ingredients
- top sirloin steak - 4 lbs., marinated
- For the Chimichurri
- parsley - 2 bunches
- cilantro - 2 bunches
- spinach - 1 head
- clove garlic - 8
- whole shallots - 4
- salt - 1 Tbsp.
- black pepper - 1 Tbsp.
- red chili pepper - 1/2 Tbsp.
- lemon juice - 1/2 cup
- red wine vinegar - 1 cup
- oil - 2 cups
Instructions
Procedure:

Grill steak to temperature. Allow meat to rest.

For chimichurri, put all ingredients except the oil in a blender and puree. Add the oil.

Slice the steak, spoon chimichurri over it, and serve with grilled vegetable skewers.
