
Spicy Tuna Tartare, Crispy Sesame rice, Avocado Smash, Hibiscus Salt, Sriracha, Ginger Soy, Soy Pearl

Ingredients
- Saku tuna block - 1 ea.
- blackened seasoning - to taste
- Ingredients for crispy sesame rice:
- sushi rice - 2 quarts
- water - 2 quarts
- rice wine vinegar - 1 pint
- sugar - 1/2 pint
- black and white sesame seeds - to taste
- Ingredients for avocado smash:
- avocado - 5 ea.
- lime - 2 ea., juiced
- Ingredients for ginger soy:
- ginger - 2 Tbsps., peeled and minced
- Kikkoman soy sauce - 4 Tbsps.
- water - 1 Tbsp.
- granulated sugar - 1 1/2 tsps.
- rice wine vinegar - 3 Tbsps.
- sesame oil - 1 Tbsp.
- Ingredients for garnish:
- Wild Hibiscus Pyramid salt flakes - to taste
- Huy Fong Sriracha - 1 drop (put on when tuna is sliced)
- Christine Le Tennier Soy Pearl - 3 pearls ea.
Instructions
Procedure for Tuna:
- Season tuna on all sides.
- Sear tuna on a hot flat top for 30 seconds on top and bottom.
- Remove from heat and set in cooler for 30 minutes.
- Remove tuna from cooler and begin to slice length-wise so you have 3 sections.
- Thinly slice into squares.
- Place avocado smash on sushi rice.
- Now put on top of the avocado.
- Add small amount of ginger soy.
- Season with hibiscus salt.
- Add soy pearl and 1 drop of Sriracha.
Procedure for Sesame Rice:
- Add rice and water to a 2 inch hotel pan.
- Cook in a steamer for 30 minutes.
- Take out of steamer then pour in a bowl.
- Bring rice wine vin and sugar to a boil. then cool.
- Slowly while stirring the rice add the vinegar to your desired taste.
- Pour rice in a quarter sheet trey and stack with another one on top. (add parchment on the bottom and top so it won’t stick).
- Put in cool overnight and have the trey weighed down with something heavy.
- Cut into desired shape.
- While cold fry until golden.
- Season with sesame seed.
Procedure for Avocado Smash:
- Cut and take out seed.
- Add to a bowl and pour in your lime juice.
- Smash with metal spoon.
- Add salt to desired taste.
- Using a spoon and a little amount of avocado to rice cake.
Procedure for Ginger Soy:
- Combine all ingredients. Stir.
- Add to squeeze bottle
