
Southern Comfort Peach Jam Pork Chops

Ingredients
- Ingredients for the pork chop:
- bone-in pork chops - 4 ea., (1 1/2 inches thick)
- olive oil - 2 Tbsps.
- salt - to taste
- pepper - to taste
- smoked paprika - 1 tsp.
- garlic powder - 1 tsp.
- Ingredients for the Southern Comfort peach jam:
- fresh peaches - 2 cups, peeled and diced
- Southern Comfort whiskey - 1/2 cup
- brown sugar - 1/4 cup
- lemon juice - 1 Tbsp.
- cinnamon - 1/2 tsp.
- Ingredients for the herb-roasted fingerling potatoes:
- fingerling potatoes - 1 lb., halved
- olive oil - 2 Tbsps.
- fresh rosemary - 1 Tbsp., chopped
- fresh thyme - 1 Tbsp., chopped
- salt - to taste
- pepper - to taste
- Ingredients for the collard greens with smoked pork:
- collard greens - 1 bunch, chopped
- smoked pork - 1/2 lb., diced
- chicken broth - 2 cups
- apple cider vinegar - 1 Tbsp.
- red pepper flakes - 1 tsp.
- salt - to taste
- pepper - to taste
Instructions
Procedure for the pork chops:
- Preheat a skillet over medium-high heat and add olive oil.
- Season the pork chops with salt, pepper, smoked paprika, and garlic powder.
- Sear the pork chops for about 4-5 minutes per side until golden-brown.
- Reduce heat and cook until internal temperature reaches 145°F. Let rest before serving.
Procedure for the Southern Comfort peach jam:
- In a saucepan, combine peaches, Southern Comfort whiskey, brown sugar, lemon juice, and cinnamon.
- Cook over medium heat, stirring occasionally, until peaches soften and jam thickens (about 15 minutes).
- Remove from heat and let cool slightly.
Procedure for the herb-roasted fingerling potatoes:
- Preheat oven to 400°F.
- Toss halved potatoes with olive oil, rosemary, thyme, salt, and pepper.
- Spread on a baking sheet and roast for 25-30 minutes, flipping halfway through, until golden brown.
Procedure for the collard greens with smoked pork:
- In a large pot, sauté smoked pork over medium heat until slightly crisp.
- Add collard greens, chicken broth, apple cider vinegar, red pepper flakes, salt, and pepper.
- Cover and simmer for 45 minutes, stirring occasionally, until greens are tender.
To assemble:
- Place the pork chop on a plate and generously spoon over the Southern Comfort Peach Jam.
- Arrange the herb-roasted fingerling potatoes and collard greens on the side.
- Serve hot.
