S’mores Mason Jars

Ingredients
- Ingredients for the Chocolate Cake (half sheet pan)
- eggs - 85 gms.
- granulated sugar - 298 gms.
- oil - 100 gms.
- cocoa powder - 47 gms.
- cake flour - 170 gms.
- baking soda - 6 gms.
- salt - 1/8 tsp.
- sour cream - 94 gms.
- buttermilk - 207 gms.
- vanilla extract - 4 gms.
- Ingredients for the Chocolate Cremeux
- cream - 413 gms.
- egg yolks - 80 gms.
- granulated sugar - 45 gms.
- milk chocolate - 150 gms.
- dark chocolate - 150 gms.
- Ingredients for the Marshmallow Fluff
- granulated sugar - 170 gms.
- corn syrup - 113 gms.
- water - 57 gms.
- salt - 1/8 tsp.
- egg whites - 65 gms.
- cream of tartar - 1/8 tsp.
Instructions
Procedure for the Chocolate Cake (half sheet pan)
- In a mixer bowl, whip eggs and granulated sugar.
- Whisk in oil.
- Add sifted cocoa powder, cake flour and baking soda. Scrape sides well.
- Add sour cream.
- Add buttermilk and vanilla extract, and mix until just combined.
- Bake at 325 degrees Fahrenheit for about 15 minutes
Procedure for the Chocolate Crémeux
- Heat cream.
- Cream yolks and sugar.
- Temper cream over yolks, and cook until nape.
- Strain over chocolates.
- Immersion blend until smooth. Avoid creating bubbles.
Procedure for the Marshmallow Fluff
- Cook sugar, corn syrup and water to 240 degrees Fahrenheit.
- While sugars are cooking, combine salt, egg whites and cream of tartar in a 5-qt. or 6-qt. mixer.
- Increase speed to medium-high, and slowly stream in hot sugar.
- Continue to whip egg whites to stiff peak.
- Use immediately.
Assembly for Mason Jars
- Dip mason jar top into simple syrup and rim with graham cracker crumbs.
- Add 1 Tbsp. of graham cracker crumbs to bottom of jar.
- Add round cutouts of chocolate cake.
- Pour or pipe in chocolate crémeux while it is warm. (Chef's note: Chocolate crémeux can be warmed over double boiler or in microwave.)
- Allow crémeux to chill and set.
- Using a round-tip pipe dollop of marshmallow fluff on top of crémeux.
- Use torch to brulée fluff.
