Sesame Seed Burger Buns

Ingredients
- bread flour - 5 lb. 13 oz.
- salt - 1.5 oz.
- sugar - 7 oz.
- milk powder - 5.5 oz.
- water - 52 oz.
- yeast - 3 oz., fresh
- eggs - 4 ea.
- butter - 7 oz.
- sesame seeds - as needed
- egg wash - as needed
Instructions
- Combine dry ingredients.
- Dissolve yeast in warm water.
- Combine all ingredients in bowl of large floor mixer.
- Mix on low speed for 3 minutes.
- Mix on second speed for 7 minutes or until the dough pulls away from the bowl.
- Proof in oiled mixing bowl for 1.5 hours.
- Scale to 3.5 oz. per bun. Toll and proof to desired size.
- Brush with egg wash and sprinkle with sesame seeds.
- Bake at 350° F for 13-15 minutes or until golden brown.
