Sesame Honey Butter Toast

Ingredients
- sourdough bread - 4 thick slices, hand-cut into preferred shapes
- salted butter - 8 Tbsps., softened
- honey - 5 Tbsps.
- cream cheese - 6 ozs.
- high-quality feta cheese - 6 ozs.
- toasted sesame seeds - 2 Tbsps.
- sesame oil - 1 Tbsp. (for frying)
- pea greens - for garnish
Instructions
Prep the Bread:
- Trim the crusts from the sourdough slices and cut into your desired shapes.
- Arrange on a parchment-lined baking sheet and bake at 350°F (175°C) for 2 to 4 minutes—just enough to slightly dry the surface. This helps develop a better texture during searing.
Make the Honey Butter:
- In a bowl, combine softened butter and honey until smooth. Set aside.
Butter and Sear:
- Spread a thin layer of honey butter on all sides of each bread piece.
- Sprinkle toasted sesame seeds over the top and bottom.
- In a nonstick pan, heat the sesame oil over medium heat.
- Sear each piece of toast, top and bottom, until golden and caramelized.
- Transfer to a wire rack to cool.
Chef's note: Do not discard the crystallized sugar and sesame residue left in the pan—this becomes the flavorful sesame brittle for garnish.
Whip the Feta:
- In a food processor, blend the feta and cream cheese until completely smooth.
- If the mixture is too thick, add a touch of honey to adjust consistency.
- Transfer to a piping bag and refrigerate briefly, if needed, to firm up slightly.
Assemble and Garnish:
- Once the toast has cooled, pipe the whipped feta mixture generously over each piece.
- Garnish with shards of the sesame brittle, an extra drizzle of honey, and a few fresh pea greens.
