'Rabbit Burrow' Cocktail

Ingredients
- Rabbit Hole Bespoke Gin - 2 ozs.
- Drumshanbo Gun Powder Gin - .5 oz.
- herbal pear shrub - .75 oz.
- cinnamon simple syrup - .5 oz.
- toasted rosemary sprig - garnish
- Ingredients for the Herbal Pear Shrub:
- water - 10 ozs., boiling
- granulated sugar - 1/2 qt.
- Absolut Pear Vodka - 2 ozs.
- white vinegar - 2 ozs.
- honey - 1 oz.
- Creme de Cassis Liqueur - .75 oz.
- rosemary - 5 sprigs
- thyme - 10 sprigs
- Ingredients for the Cinnamon Simple Syrup:
- water - 10 ozs., boiling
- granulated sugar - 1/2 qt.
- pancake syrup - 4 ozs.
- Batavian cinnamon sticks - 16 ea. (each stick should be about 3 inches long)
Instructions
Procedure for the Herbal Pear Shrub:
- Add ½ quart of granulated sugar to a plastic quart container (or a comparable container).
- Add 2 ozs. Absolut Pear Vodka, 2 ozs. white vinegar, 1 oz. honey and .75 oz. Crème de Cassis Liqueur to the plastic quart container with sugar.
- Grab the rosemary and thyme sprigs with tongs and torch the sprigs with a butane torch for 10 seconds. Then add them to the quart container.
- Add 10 ozs. of boiling water into the quart container and stir with a spoon until mixed thoroughly.
- Let the open container sit at room temperature for 2 hours, then close the container and refrigerate the shrub for 20-24 hours.
- After refrigeration, open the container and strain out the rosemary and thyme.
Procedure for the Cinnamon Simple Syrup:
- Add ½ quart granulated sugar to a plastic quart container (or a comparable container).
- Add 4 ozs. pancake syrup and 16 Batavian cinnamon sticks to the plastic quart container.
- Add 10 ozs. of boiling water into the quart container and stir with a spoon until mixed thoroughly.
- Let the open container sit at room temperature for 2 hours, then close the container and refrigerate the simple syrup for 20-24 hours.
- After refrigeration, open the container and strain out the cinnamon sticks.
To Assemble:
- Add ingredients into shaker tin with ice.
- Stir shaker tin with spoon until cold.
- Strain into a coupe glass.
- Grab a rosemary sprig with tongs and torch the sprig with a butane torch for 10 seconds.
