Peppermint Cheesecake

Ingredients
- Cheesecake Mix
- cream cheese - 1350 gms., room temperature
- sugar - 450 grams
- peppermint extract - 4 gms. (Chef’s note: This may vary. It should be tasted.)
- eggs - 150 gms.
- sour cream - 255 gms.
- vanilla bean - 1 ea.
- red color - as needed
- Flourless Chocolate Cake
- butter - 340 gms
- sugar - 860 gms.
- salt - 8 gms.
- eggs - 800 gms.
- cocoa powder - 240 gms.
- Peppermint White Chocolate Chantilly
- powdered gelatin, 200 bloom - 9 gms.
- water - 45 grams (to hydrate gelatin)
- heavy cream - 815 gms.
- white chocolate - 180 gms.
- vanilla bean - 1 ea.
- peppermint crumble - 125 gms.
Instructions
Procedure for Cheesecake Mix
- Cream the cream cheese and sugar. Add the vanilla bean seeds and the peppermint extra and scrape the bowl well.
- Mix and continue to scrape the bowl until the mixture is smooth.
- Add the eggs slowly, maintaining the emulsion. Then add the sour cream and then adjust the color as desired.
- Pour into a flexipan and bake at 200° F until the cream cheese custard is set. Freeze to unold.
Procedure for Flourless Chocolate Cake
- Cream the butter, sugar and the salt for 1 minutes and scrape the bowl.
- Cream for an additional 10 minutes and scrape the bowl again.
- Slowly add the eggs. Maintain the emulsion by letting each addition fully incorporate, then scrape the bowl again.
- Sift the cocoa powder and mix. Spread onto a sheet pan and bake at 350° F. This recipe yields 1 full sheet.
Procedure for Peppermint White Chocolate Chantilly
- Bloom gelatin in the water and then melt.
- Heat cream, vanilla bean and add the peppermint crumble. Pour over white chocolate stir until smooth and add the gelatin.
- Pass through a chinois and store in a container for 12 hours. Whip to piping consistency.
Assembly
- Cut the flourless chocolate cake the desired size based on the flexipan size.
- Place cheesecake in the center and place on the dish.
- Whip the peppermint chantilly and pipe and decorate as desired.
