Lemon Mint Quinoa Salad

Ingredients
- quinoa - 1 cup, cooked and cooled
- green onions - 3, sliced with tough ends removed
- extra virgin olive oil - 1 Tbsp.
- garlic clove - 1, crushed in garlic press
- lemon juice - 1 Tbsp., fresh squeezed
- mint leaves - 3 Tbsps., fresh, chopped
- lemon- pepper - to taste
- salt - to taste
Instructions
- Place the cooked and cooled quinoa, green onions, olive oil, garlic and lemon juice together in a large bowl. Stir until combined. Season with mint, salt and lemon-pepper. Mix well.
- Serve chilled or at room temperature.
