Irene salad with ponte dressing

Ingredients
- iceberg lettuce - 4 cups, finely shredded
- ham - 1 cup, julienned
- turkey - 1 cup, julienned
- tomatoes - 1/2 cup, julienned
- egg - 1 ea., diced
- tomato wedges - 2 ea.
- egg wedges - 2 ea.
- Ponte (House) Dressing - 1/2 cup
- Ingredients for Ponte (House) Dressing:
- mayonnaise - 4 gal.
- yellow mustard - 3 cups
- apple cider vinegar - 1 1/2 cups
- white pepper - 2 tsp.
- sugar - 6 cups
Instructions
- Mix all ingredients except for tomato and egg wedges and dressing thoroughly in a bowl.
- Garnish with tomato and egg wedges.
Procedure for Ponte (House) Dressing:
- Add all ingredients except mayonnaise to a 20-quart mixer and mix for 1 hour.
- Add mayonnaise and mix for 30 minutes.
