Honey & Ale Braised Bratwurst Sandwich

Ingredients
- bratwurst - 4, fresh
- garlic cloves - 5
- onion - 1, yellow
- mango - 1, fresh
- local ale - 1 qt.
- Clover honey - 2 cups
- chicken stock - 2 cups
- Nappa cabbage - 1
- Savoy cabbage - 1
- apple - 1, red
- onion - 1, red
- Serrano Chiles - 2
- apple cider vinegar - 1/4 cup
- grain mustard - 1/4 cup
- Sprig Fresh Thyme - 3
- rolls - 1 dozen, soft, fresh
Instructions
- Sear off bratwurst and set aside. Rough chop garlic, onion and mango and layer on the bottom of a 400 pan. Lay bratwurst on misen place and add beer, honey and chicken stock. Cover with parchment paper and slice vents on top. Braise over at 280°F for 2.5 hours and let cool.
- For the slaw: Thinly slice nappa and savoy cabbage and put into a mixing bowl. Cut apple into matchstick and slice thin red onion & Serrano and mix into cabbage. Add apple cider vinegar and grain mustard and gently toss.
- To Build Sandwich: Lightly toast bun, insert 1 bratwurst. Garnish generously with slaw and serve with your choice of chips or fruit.
