Gasparilla Inn Key Lime Pie

Ingredients
- For crust:
- graham cracker crumbs - 400 gr.
- granulated sugar - 225 gr.
- unsalted butter - 150 gr., melted
- For key lime base:
- egg yolks - 300 gr.
- lime zest - 12 gr.
- key lime juice, bottled - 400 gr.
- key lime juice, fresh - 400 gr.
- sweetened condensed milk - 2500 gr.

Procedure
- For crust: Combine everything in a bowl until properly mixed.
- For key lime base: Combine all remaining ingredients in a bowl and mix until well incorporated. Line flat black sheet trays with parchment then a silpat, set up rings and add 300g of graham cracker crumbs, bake for 5-10 minutes.
- Press crumbs to edge of ring again and add key lime base to the rings. Bake in a combi oven @ 300°F for 30 minutes fan speed 2. Bake for an additional 10 -15 minutes with the fan at 4 bars.Chef's Note: This needs to be baked this way to ensure quality of the pie.
- Make and pipe favorite meringue recipe, torch and plate with raspberry coulis.
