Fried Nori Tuna Togarashi

Ingredients
- Ingredients for Fried Nori Sheet:
- kotobuki full nori sheet - 1 ea.
- Kikkoman tempura batter mix - 1 cup
- cold water - 1 cup
- Ingredients for kimchi slaw:
- Napa cabbage - 1 head
- kimchi - 3 cups
- Kewpie mayo - 1 cup
- lemon juice - 1/2 cup
- rice wine vinegar - 1 cup
- salt - to taste
- pepper - to taste
- Ingredients for sesame-crusted tuna:
- IQF tuna steaks - 5 ozs.
- Ingredients for wasabi aioli:
- mayonnaise - 1/2 cup
- wasabi paste - 2 Tbsps.
- rice wine vinegar - 1 Tbsp.
- garlic - 1 clove, finely minced
- Ingredients for garnish:
- pickled ginger
Instructions
Ingredients for Fried Nori Sheet:
- Stir together until smooth. Do not over mix.
- Drop gently into hot oil, 375°F, until golden brown. Drain excess oil and season with salt and pepper.
Ingredients for kimchi slaw:
- Combine all ingredients.
Ingredients for sesame-crusted tuna:
- Pat them dry rub the oil, salt, and pepper.
- Crust them on sesame seeds black and white. Set pan on medium-high heat and seared the both sides until rare.
- Slice them 2 inches thick.
Ingredients for wasabi aioli:
- Whisk together all ingredients and season to taste.
