
Flourless Chocolate Cake

Ingredients
- semisweet (66% or greater) chocolate - 910 gms.
- butter - 454 gms.
- sugar - 108 gms.
- eggs - 16 ea.
- pure vanilla extract - 1 Tbsp.
- coffee extract - 2 Tbsp.
Instructions
- Melt chocolate and butter over double boiler.
- Whip eggs and sugar to ribbon stage.
- Add flavor extracts to eggs.
- Fold chocolate into eggs.
- Bake 300°F in a water bath, 20-30 minutes, depending on the size of vessel. Cake should not rise and still appear shiny on top.
