Florida Gulf Shrimp and Grouper Burger

Ingredients
- raw 71/90 shrimp - 1 bag (2.5 lbs.), thawed
- grouper scrap - 1.5 lbs. (24 ozs.)
- egg whites - 4 ozs.
- garlic - 3 cloves, grated
- lemons - 2 ea., zest
- salt/pepper/garlic spice - 1 Tbsp.
- cilantro - 1/2 cup, chopped
- scallions - 1/2 bunch, minced
Instructions
- Keep all ingredients ice cold. Rough-pulse shrimp, egg whites, grouper scrap, and garlic in the robot coupe. Do not purée.
- Place in a mixing bowl. Stir in seasonings, lemon zest, cilantro, and scallions until fully combined and 'sticky.'
- Form into 6-ounce patties between parchment patty paper.
- Label, date, chill until needed.
