Chamomile Martini Mocktail

Ingredients
- chamomile simple syrup - 2.5 ozs.
- fresh blackberries - 4 ea., muddled
- fresh lemon juice - 1 oz.
- ice - as needed
- lemon twist or blackberry - for garnish
- Ingredients for chamomile simple syrup:
- chamomile tea - 8 bags
- hot water - 4 cups
- sugar - 1 cup
Instructions
Procedure for the chamomile simple syrup:
- In a pitcher, steep the 8 chamomile tea bags in 4 cups of hot water for about 10-15 minutes.
- Remove the tea bags and stir in 1 cup of sugar until fully dissolved.
- Allow the syrup to cool before using. Store any leftover syrup in the refrigerator for up to two weeks.
To assemble:
- In a cocktail shaker, add the 4 muddled blackberries. Use a muddler or the back of a spoon to gently crush them, releasing their juices.
- Pour in 2.5 ozs. of the chamomile simple syrup and 1 oz. of fresh lemon juice.
- Fill the shaker with ice and shake well for about 15-20 seconds until chilled.
- Strain the mixture into a chilled martini glass.
- Add a lemon and blackberry for a finishing touch.
