
Barbecue Rub & Bourbon Barbecue Sauce

Ingredients
- For Barbecue Rub
- salt - 16 oz.
- paprika - 1/4 cup
- chili powder - 2/3 cup
- ground ginger - 1 tsp.
- ground nutmeg - 1 tsp.
- dry mustard - 2 tsp.
- granulated garlic - 2 Tbsps.
- ground chipotle - 1 tsp.
- ground cloves - 1 tsp.
- ground black pepper - 1 Tbsp.
- brown sugar - 1 cup
- For Bourbon Barbecue Sauce
- ketchup - 28 ozs.
- bourbon - 6 ozs.
- molasses - 1 Tbsp.
- whole-grain mustard - 1 Tbsp.
- minced garlic - 1 Tbsp.
- minced shallots - 1/4 cup
- diced carrots - 1 cup
- diced celery - 1 cup
- diced onion - 1 cup
- light brown sugar - 1/4 cup
- Sriracha - 1 tsp.
- Worcestershire sauce - 1 tsp.
- salt - 1/2 tsp.
- black pepper - 1/4 tsp.
- minced garlic - 1 Tbsp.
Instructions
Procedure:
- For Barbecue Rub: In a bowl, combine all of the ingredients and mix well. Marinate ribs for at least 2 hours before cooking.
- For Bourbon Barbecue Sauce: Combine all of the ingredients in a food processor and process until smooth (about 15 seconds). Scrape down the sides of the bowl with a rubber spatula. Pulse 2 to 3 times. Store in refrigerator until ready to use (shelf life is seven days in the refrigerator).
