Atlantic Beach Tart

Ingredients
- Ingredients for the tart shell:
- Ritz Crackers - 1 sleeve, 4 ozs, robot coupe into fine crumbs
- butter - 3 ozs., melted
- granulated sugar - 3 Tbsps.
- Ingredients for the filling:
- sweetened condensed milk - 20 ozs.
- Meyer lemon juice - 6 ozs.
- egg yolk - 108 gms.
Instructions
Procedure for the tart shell:
- Form into tart rings.
- Chill for 10 minutes.
- Bake at 325°F for 4 minutes.
Procedure for the filling:
- Mix well and fill tarts.
- Bake at 300°F for roughly 12-13 minutes or until almost completely set.
- Let cool completely before unmolding.
- Top with chantilly and your choice of garnish: lemon zest, twist, etc.
